Shortcut Blackberry Cobbler Recipe
Fresh fruit cobblers are a year-round staple, and there are hundreds of versions with hundreds of different crusts and fillings. When I’m in a big hurry and have fresh berries or peaches on hand, I use my Basic Master Baking Mix along with some milk and melted butter to make a delicious cobbler crust. While I always have this baking mix on my pantry shelf, it can be used interchangeably with commercial baking mixes such as Bisquick. Bisquick was invented in 1930 by Carl Smith, an executive at General Mills. It was put on the market in 1931, and has been a mainstay in kitchens all over the world since. I prefer to make my own since I can add ingredients that are fresh and don’t contain preservatives. Homemade mix is also cheaper. You can use my mix or a commercial brand in this luscious Shortcut Blackberry Cobbler and have a dessert ready for the oven in about 10 minutes.

If you don’t have fresh blackberries, you can substitute raspberries, peaches, or blueberries. This makes only enough for four servings, which is perfect for small families. The recipe can easily be doubled, however, and baked in a 2-3 quart baking dish. Be sure to serve it warm with ice cream or sweetened whipped cream. It’s also good at room temperature.

2 cups fresh blackberries
6 tablespoons sugar
1 lemon, zested and juiced

Topping:
1/2 cup milk, (I use whole milk)
1/2 cup master baking mix
1/4 cup melted butter

  1. Preheat oven to 375°.
  2. Mix the berries, sugar, and lemon juice and zest in a bowl. Stir well and let sit while making the topping.
  3. Topping: Whisk together the milk, baking mix, and melted butter. Pour into an ungreased 1 quart baking dish.
  4. Stir the berries and pour them over the top of the batter, scraping in any sugar and juice that has accumulated. Place in the oven and bake 45-50 minutes or until the top is golden brown. Serve warm or at room temperature.
